Notes: Author’s dedication to Lucrezia d'Este. Giovan battista Rossetti, a nobleman from Ferrara, was the Maggiordomo and Banquet Organizer  for 27 years in the Court of Este and Ferrara. In the volumes of the XVI century, this is, with the work of Romoli, the treatise on banquet organization most complete and interesting for its structure and richness of contents. The Ferrara edition is the only one available.
