Messina-style Kid Goat

Ingredients: Per 6 servings

  • 2 lb baby lamb
  • lard
  • onion
  • 1 lb canned tomatoes
  • rosemary
  • salt and pepper
  • black olive, pitted
  • red wine


Carefully wash and dry the pieces of kid meat. In a cold oven dish, put the pieces of meat together with the clarified pork fat, the onion cut into thin slices, the tomato pulp, some rosemary needles, salt e pepper. Bake in a hot oven (400°F) for about 60 minutes. A variant of this recipe puts the pieces of kid goat, well oiled, into an oven dish, seasoned with salt and pepper. On the surface, arrange an abundant handful of pitted black olives in pieces, and spray with a little red wine. Bake for 30-40 minutes at 325°, remove from the oven, splash with a little more red wine, put back into the oven for another 4-5 minutes and serve.
