Tuna with Herbs

Ingredients: Per 6 servings

  • 6 slices tuna
  • extra virgin olive oil
  • 1 cup dry white wine
  • spinach
  • ¾ oz parsley
  • garlic
  • all-purpose flour
  • 1 onion
  • pepper
  • 1 lemon

Preparation:

Put 3 spoonfuls of oil and the well-chopped onion into a pan. As soon as the onion browns, add the chopped mixture of spinach, parsley and garlic, and mix. After a while, season with salt and pepper, douse with the wine, allow to evaporate, and leave to reduce almost completely.

Heat 1/2 cup of oil in another pan, line up the slices of tuna well-dried and floured, and season with salt and little pepper. Drain when crispy and nicely golden, arrrange in a lightly greased oven-dish, covered with the sautéed mixture and leave in the oven for 15 minutes more.

Serve in the cooking pot, completing with a drizzle of lemon juice.
