Ingredients: Per 4 servings
Place the dough on a floured surface and press down lightly forming a well. Add the lard and the eggs to the center. Work the dough together with the additional ingredients, incorporating a little more flour from time to time. Knead well and form into a ball. Cover and let rise in a warm place for an hour. In the meanwhile, boil the vegetables in salted water for 2 minutes then drain. Thinly slice the shallots and sauté in a pan with 2 tbsp butter. Add the vegetables and cook for 5 to 6 minutes, stirring often. Season with salt and pepper, then let cool. Then, flatten out the dough and place the vegetables on top. Knead once again to mix in the vegetables. Let rise for another half hour. Then, roll up the dough like snail's shell. Place the dough in a buttered baking dish and bake for about 35 minutes at 400 °F.
