Pizza with scamorza

  • 1 lb rustic bread, sliced
  • extra virgin olive oil
  • 3 eggs
  • salt and pepper
  • lb Scamorza cheese


Oil a cake pan and arrange the bread on the bottom. Cover the bread slices with slices of scamorza, sprinkle a few basil leaves over. Cover with eggs, previously beaten and seasoned with salt and add a dash of freshly ground pepper. Put in a pre-heated oven at 400° F until golden and crisp on top. Serve immediately. For a more marked flavour add some anchovy fillets.
