Scrape the mussels thoroughly and wash them to free them from incrustations and impurities. Extract the mollusks raw from the shells, dry them well with a clean cloth and load 12 onto each skewer. Wrap the skewers in a slice of smoked lard and sprinkle with melted butter.
Line up the skewers in an oven-dish, put in the oven for some minutes, remove, and transfer to a serving plate. Serve immediately, passing round the tomato sauce separately.
