Garlic Focaccia

Ingredients: Per 4 servings

  • 1 lb all-purpose flour
  • ¾ oz fresh yeast
  • 5 cloves of garlic
  • 1 tablespoon oregano
  • ½ cup Extra Virgin Olive Oil
  • salt


Mix together 1/2 cup flour with the yeast, previously dissolved in 3 tbsp of warm water. Form the dough into a ball and cut a cross on top. Place in a floured bowl, cover and let rise for 20 minutes. Knead the remaining flour with a pinch of salt, 3 tbsp oil, the other ball of dough and about 7 tbsp of warm water. Knead the dough for 10 minutes, then form into a loaf. Place in a large, floured bowl. Make a cross on top of the dough and let rise, covered and in a warm place for an hour. Deflate the knead again for a couple of minutes. Press down with your hands and place on a oiled baking sheet. Peel the garlic cloves and cut into thick slices. Dot the dough with the sliced garlic, and let rise for another half an hour. Sprinkle with oregano, drizzle with the remaining oil and bake in a 500 °F oven for 10 to 15 minutes.
