Consommé is normally served before hot starters. The base of consommé is common stock. To obtain a good consommé, it is necessary to: 1) have available 6 1/3 cups of common stock for 4 1/4 cups of consommé 2) add more chopped meat, very lean (10,5 oz for 4 1/4 cups of consommé desired), blended with egg white 3) add other flavorings (a carrot and a stalk of celery, chopped) 4) bring everything to the boil and simmer for about one hour 5) pass the consommé through a napkin, soaked and wrung out
