- 3 ½ oz coffee, coarsely ground
- 8 cups cooking cream
- 1 lb sugar
Dissolve the coarsely ground coffee in the cooking cream. Put the preparation onto the heat. Just before it comes to the boil, add the sugar and stir in with a wooden spoon. Leave the liquid to rest until the coffee sinks to the bottom. At this point, sieve everything taking care that the coffee does not pass through. Pour the liquid into an ice-cream maker and run it until the ice-cream is ready.
