Roasted Salt Cod with Peppers

Ingredients: Per 4 servings

  • 1 ½ lb salt cod, dry
  • ¼ cup extra virgin olive oil
  • 1 yellow pepper
  • 1 red pepper
  • 1 clove of garlic
  • 1 sprig parsley

Preparation:

The salt cod should be soaked for 2 days and 2 nights, taking care to change the water often. After draining and drying it, it should be cut into pieces and roasted on a grill together with the washed and dried peppers.

After this, the pieces of salt cod should be boned and cut into pieces, trying as much as possible to eliminate any remaining skin.

Prepare the peppers in the same way, slicing them into wedges and then mixing with the salt cod. Dress with the olive oil, chopped garlic and parsley. Serve cold.
