How to make rolled-cookie dough

  • 7 oz egg yolks
  • 1 ¼ cup sugar
  • 1 ¾ cup all-purpose flour
  • 2 oz starch
  • 11 oz egg white


Whip the egg yolks with ½ cup sugar; in the meantime whip the egg whites with ¾ cups sugar. Sift the flour and starch and slowly add it to the whipped egg yolks. Lighten the dough by adding the egg whites.

Bake in a 450°F oven for 7 to 8 minutes.
