Lamb Genzano-style

Ingredients: Per 8 servings

  • 4 ½ lb lamb
  • 2 lb potatoes, yellow
  • ½ cup extra virgin olive oil
  • 1 pinch oregano
  • salt
  • parsley, chopped
  • 2 cloves of garlic, chopped
  • 3 ½ oz crustless white bread, fresh
  • 3 ½ oz Parmigiano Reggiano cheese, grated

Preparation:

In a bowl crumble the inner part of the bread and season with oil, Parmesan cheese, oregano, salt, garlic and parsley to form a paste. Then peel and wash the potatoes and cut them into slices but not too thin.

Oil an oven-dish and put into it the potatoes and the lamb in pieces, sprinkle with the bread crumbs, some olive oil, salt, and a little water.

Cover the oven-dish and bake (at 350°F) for about 90 minutes. Before removing from the oven, leave uncovered to brown for a few minutes.
