Camolei Michele (I.C.M.C.)

Michele Camolei is the Head Chef of Osteria Ristorante Italiano, bringing with him a culinary prowess for fine Italian cuisine.

“I am pretty creative and very interested in developing new recipes and techniques. It is important to understand modern food trends, while remaining respectful to Italian traditions.”

Camolei landed his first role working with prominent chef, Gennaro Contaldo in Antonio Carluccio’s Neal Street Restaurant in London.

In 2005, he joined the prestigious Ristorante Sadler in Tokyo as Chef de Partie under the tutelage of Claudio Sadler, and over a year later, he accepted a higher position at the Tokyo branch of Restaurant Sant Pau, during which time he helped steer the restaurant to Michelin-star status.

In late 2007, Camolei participated in the Tokyo Armani Ristorante opening, which brought together many Hollywood celebrities and Giorgio Armani himself. He then had the opportunity to work alongside Chef Patron Enrico Derflingher – once the personal chef to Prince Charles and the late Princess Diana – at Officina di Enrico. With such a varied background, it’s not surprising that Camolei’s food philosophy is very colourful.

Now in a leading role of Chef Patron at Osteria in Hong Kong, Camolei believes his worldly experiences have helped him appreciate cultural diversity and tradition, allowing him to create truly authentic dishes that represent and highlight the various regions of Italy.
