I am an Italian born (Rome) and Australian citizen (Perth Western Australia) with a Japanese permanent residency (Osaka).
The cuisine in my restaurant in Japan was ‘tailored’ to make each guest’s experience a ‘harmony’ of flavors of Italian regional plates to tantalize the guest’s tastes buds and navigate them into an Italian culinary adventure.
As the President of the Associazione Culturale Enogastronomica Italiana in Giappone for the Kansai region, my responsibilities range from arranging and executing culinary promotions and trade/fair events also allowing me to promote Italian cuisine in banquets, private functions and most of all television audiences.
I have also been fortunate to be invited as Guest Chef and be able to travel the world and demonstrate the vastness of the Italian culinary ‘genre’. As a culinary instructor with the Ecole Vantan cooking school in Osaka and the CP Ecole Culinary Institute of Kobe, I have been given many opportunities in presenting cooking classes and demonstrations promoting Italian cuisine at beginners, intermediate and advanced levels.
In the year 2010 I was awarded with a Bronze medal in the WACS World Culinary Championships in Luxemburg representing Japan (regional team) as the Italian Culinary Ambassador. (also a great honor as in past years only Japanese nationals were allowed to participate). Currently promoting culinary ‘tours’(presentation and promotion) of Italy in collaboration with the Istituto Culturale Italiano in Giappone.
